Rachel travels to Roaring Water Bay to meet Helena Hickey and her geese. Then she prepares roast goose with a traditional potato and apple stuffing. She tastes chocolates with Allison Roberts of Clonakilty Chocolate, including one featuring sea salt and seaweed, and they make truffles for a chocolate sleigh. Rachel takes some chai chocolate to use in her chocolate and pear tart. Finally, Rachel is joined by Justin Green and they enjoy cocktails by the fire with his gin, made from whey.
