Switching to spice for the primo, Michael prepares a spicy sausage and ricotta pasta. For his secondo, Michael goes for a hearty lamb au gratin with peas and asparagus.

Bonacini's Italy is a cooking show presented by celebrity Welsh-Canadian chef Michael Bonacini. He is the co-founder of one of Canada’s leading fine dining restaurant companies, Oliver & Bonacini Restaurants, and explores the heritage and history of the rich Italian cuisine in this program. Cooking, he takes viewers on a trip through 15 Italian regions, exploring the flavours and ingredients that make each of these areas unique. Each episode of the show is set in a contemporary kitchen and takes the viewers through an entire meal from one region, from antipasto, soup, or salad, to delicious primo, succulent secondo, and even sometimes a decadent dolce. At the same time, Bonacini entertains his viewers with stories of his travels in Italy and tells us interesting facts about each region he focuses on.
